In his house in Friedrichstadt (Fürstenburgwal), Ovens had a substantial collection of paintings by Dutch, Flemish and Italian masters. At the time of Ovens' birth, Tönning was officially a fief of Denmark. Stylistically speaking Ovens belongs to the North-Netherlandish School. Gerson 1940/1983, p. 213 sees him as a very important mediator between Dutch art and his fatherland. All in all Ovens spent 22 years of his life in the Republic. No wonder that Gerson calls Ovens 'Dutchified' ('verholländert').

Although the relevant church ledgers concerning his birth, are failing, Jürgens's grandson indicated that the year of his birth was 1623; and in his obituary his age is given as 'Ob.Æt. LV' (Köster 2017, p. 21).

Ovens was the oldest of six children from Ove and Agneta Broders from Tönning. It was the second marriage for Agneta, who already had three sons from an earlier marriage with a man called Jürgen. One of Jürgens's own brothers was also (art) merchant and painter (Broder Ovens) (Köster 2017, p. 21).

    He probably recived his first lessons in Tönning. Although the name of his teacher is not known, it may have been Lorens and/or Abraham de Keyster, who were both working for the court of Gottorf (Köster 2017, p. 21-22 )

    Somewhere between 1638 and 1651 Ovens was in Amsterdam for the first time (Sumowski 1983, vol. 3, p. 2222, note 7). According to Köster 2017. Jürgen came to Amsterdam c. 1640, where his merchant father had professional contacts.

    active for Duke Friedrich III von Schleswig-Holstein-Gottorf. He was initially registered as a 'painter from Amsterdam', but during the year 1651 he came to Gottorf in person for an extensive stay (Köster 2017, p. 23 and p. 53ff)

    Ovens acquired the Amsterdam citizenship on 27 November 1657. After Govaert Flinck's death in the beginning of February 1660, Ovens moved into his Studio (Sumowski, p. 2218). On 16 January 1663 he witnessed the baptism of a daughter of Johanes Lingelbach. In the beginning of June 1663 he left Amsterdam and moved to Friedrichstadt an der Eider (see the correspondence between Johan de Witt and Pieter de Graeff of April and May 1663, published in Leupe 1874 and Fruin 1922. See also Köster 2017, p. 109-171).

    Ovens travelled to Antwerp between 1657 and 1663 (Sumowski 1983, vol. 3, p. 2223, note 25). Older literature assumes a presence in England in 1659, but no evidence for this has been found (Sumowski 1983, vol. 3, p. 2223, note 25)
